Ancestral culinary culture in Ecuador

Since the time that the Spaniards still did not arrive to America, to conquer it, people who lived in these lands already had a great culture, and also a great culinary culture, that is to say that they already had rites for food and different ways of cooking it and get it.

In the times of the conquest and colonial times, the culinary culture that existed before the conquest mixed with the Spanish culinary culture resulting in dishes like the fanesca that comes from the Spanish dish called juanesca.
